HM 201 FOOD AND BEVERAGE MANAGEMENT An in-depth study of the practices and principles used in food
and beverage operations. Students will examine issues related
to inventory management, cost of food/beverage sales,
purchasing, legal and ethical issues as well as management and
marketing issues. All students enrolled in this course will be required
to complete a CARE (Controlling Alcohol Risk Effectively)
program. Lecture: 3 hours per week. 3 Credits
